Wine sourced from two vineyards in Pinhel, approximately 15 and 10 years old, planted at 600 metres of altitude on poor granitic soils with some quartz. The climate is marked by very hot summers with significant diurnal temperature variation and cold, dry winters. Hand-harvested into small crates, with manual bunch selection. Total destemming, followed by fermentation in stainless steel tanks with temperature control. Each variety was vinified separately due to the significant difference in ripening times. The wine is aged for 15 months in used French oak barrels, followed by 9 months in bottle.
