Pinhel is a historic city rich in tradition. Commonly known as the “Falcon City”, its origins trace back to Roman times as a prehistoric hillfort, and later to the Christian Reconquest of the Iberian Peninsula, when it played a strategic defensive role during the reign of King Afonso Henriques. The name D. Manuel I pays tribute to the reign of King Manuel I, the period during which Portugal built its global empire through the great Portuguese Discoveries, including the sea route to India in 1498 and the discovery of Brazil in 1500. The grapes selected for this wine were chosen for their ability to deliver its delicious profile. Vinification involves careful, controlled maceration designed to preserve the quality of the fruit. Fermentation takes place at around 28 °C using selected yeasts chosen to match the wine’s generous and balanced character. Maceration is carried out in stainless steel, cement and oak vats, giving D. Manuel I its distinctive profile.
