The year 2022 was quite dry throughout the winter, spring, and summer months. The heat and low humidity limited vine diseases and facilitated organic practices, resulting in very healthy grapes. However, due to the lack of water, the yield was low, with smaller-than-normal clusters and berries. Bringing the harvest forward allowed us to produce white and rosé wines that are highly aromatic, fresh, and well-defined, as well as red wines that are concentrated and feature firm tannins.
Winemaking: The four grape varieties were fermented separately in truncated conical stainless steel tanks, with the exception of Alicante Bouschet, which was fermented in a wine press.
Aging: The wine aged for 24 months in new French oak barrels.
Pairing: Aged red meats (roast lamb with herbs, charcoal-grilled or pan-seared beef with a spice crust), game dishes or exotic meats, risottos and refined pasta dishes, Aged cheeses (hard cheeses such as Parmesan, Grana Padano, or aged Manchego), and specific desserts (notably: dried fruit and spice tart and low-sugar dark chocolate).
