Organic wine made from 100% Pinot Noir grapes grown under dry-farming conditions, sourced from schist-based vineyards in the parish of Vermiosa at 700?metres altitude. Hand-harvested grapes, partially destemmed and immediately crushed. Full fermentation in 390-litre barrels (Perles) with indigenous yeasts and no temperature control, followed by 12 months of ageing in the same barrels. This wine was neither stabilised nor filtered. Natural sediment may form with age.
