VINEYARD DESCRIPTION - 155 km from the Atlantic coast, at 690?m altitude, 8-year-old vines / 6 t/ha. East–West orientation. TRAINING SYSTEM - Single cordon. CLIMATE AND SOIL - High-altitude plateau with strong temperature variations – very hot summers, and wind and snow in winter. HARVEST - 100% hand-harvested in the third and fourth week of September. VINIFICATION - The grapes are destemmed and crushed directly into tank; 3 days of cold maceration; alcoholic fermentation begins at 12?°C and finishes at 32?°C, with malolactic fermentation in French oak AGEING - 3 months in oak barrels
