<strong>ORIGIN </strong>- A very old vineyard parcel at Prado Novo, in the parish of Vermiosa, planted on clay-limestone soils with quartz veins, at 700 metres of altitude. <strong>VINIFICATION </strong>- Hand-harvested grapes, crushed without destemming. Spontaneous fermentation in stainless steel tanks. <strong>AGEING </strong>- Lees stirring (bâtonnage) until bottling at the end of February, followed by 3 months of bottle ageing.

TASTING NOTES - Very fine and elegant on the nose, with fresh citrus notes and subtle floral nuances. Broad and mineral on the palate, with enveloping acidity that highlights the freshness of high-altitude grapes. Fruit and minerality are in harmony with the complex notes derived from ageing on fine lees, leading to a long, persistent finish

FOOD PAIRING - As an aperitif, or with grilled fish and seafood, in good company.
