A more delicate and demanding approach to the Síria variety was explored. The result is a wine ready to drink, yet with excellent ageing potential.
Fresh, provocative and crisp, with herbal notes of lemon balm and, more prominently, lime, along with a hint of bay leaf. The nose reveals fine stone-fruit aromas suggesting apricot and peach, all in a balanced, subtle, refined and elegant register.
The finish delivers a refreshing, long acidic lift, with generous mouthfeel but no excess… ending on a flinty note, with the aroma and flavour of wet granite.
Pairs well with elaborate dishes and is excellent as an aperitif, with stewed white meats, rich fish, seafood, lightly aged cheeses and particularly soft cheeses.
