Organic wine made from 100% Sauvignon Blanc grapes, grown under organic dry-farming conditions. Sourced from a vineyard parcel on clay-schist soils at 750 m of altitude in the parish of Vermiosa, within the Douro International Natural Park. Hand-harvested grapes, whole-bunch pressed without destemming to preserve the full aromatic potential. Spontaneous fermentation in stainless steel tanks at controlled temperatures between 16-17 °C. Aged on lees with bâtonnage for 2 months, followed by 3 months of bottle ageing.
