Chef Maria Caldeira de Sousa studies in depth and defends the food heritage that translates into rich and classic dishes. Seconded by her husband, Rui Sousa, the choreography of service, explanations and alignment of each meal result in an unexpected learning, but that leaves a mark. It is worthwhile to take the time to be able to absorb as much of the living class as the table experience.
