The grapes are whole-bunch pressed, without crushing or destemming, to preserve their full aromatic potential. Great care is taken to ensure that all pre-fermentation operations are carried out with the utmost precision, as they are crucial to the intrinsic quality of the future wine and to the preservation of primary aromas. Fermentation and ageing take place in used French oak barrels on fine lees, with regular stirring until bottling.
