A non-irrigated vineyard located in the parish of Vermiosa at an average altitude of 700 meters.
Hand-harvested, whole-cluster pressing without destemming to preserve the full aromatic potential. Fermentation in stainless steel tanks at 16–18°C.
Aged with stirring of the fine lees (“batonnage”) at the end of alcoholic fermentation for two months, followed by brief bottle aging until March of the year following the harvest.
